Inzolia is a white grape of Sicily that is often blended with Grillo and Catarratto. The grape is used to offset the very high acidity of the other two grapes and to provide a degree of balance and integration. In other words, it is just about medium everything - body, alcohol, acid. It is lemon in aroma and flavor, adding a brightness and refreshing tone as well.
Inzolia does well in the hot and dry climate of Sicily and is very drought resistant. It is early ripening and must be harvested early to keep any of its natural acidity for blending. It is high yielding and is found in wines across Sicily and in many DOC white wines.
The wines are pressed, fermented at mid range temperatures to preserve fruitiness and kept in stainless steel for 6 months before release as a drink now wine.
